Asian noodle salad with tamarind seared fish

Perfectly seared fish with a vibrate fresh vegetable and noodle asian salad.

Asian Inspired Fish and Noodle Salad, Serves 2 

Ingredients:

For the Salad:

  • 2 small pieces of white fish
  • 1 pack of noodles
  • 1/2 a carrot, julienned
  • 1/2 a capsicum, thinly sliced
  • 1/4 of a large cucumber, cut in to chucks
  • 1/2 a red onion, thinly sliced
  • 10 shell-on edamame beans (optional, you just need to pop them out of the shell)
  • Handful of salty peanuts or your choice of nuts
  • Fresh herbs: coriander, mint, and Thai basil or regular basil

For the Dressing:

  • Juice of half a lime (or store-bought lime juice)
  • 1 teaspoon fish sauce
  • 1/2 teaspoon sesame oil
  • Small lump of brown sugar
  • 1 clove garlic, finely chopped
  • Small piece of chilli, finely chopped

Fish Marinade:

  • 1 teaspoon tamarind paste
  • 1 teaspoon water

Cooking Steps:

  1. Prepare Vegetables and Herbs:

    • While bringing a pot of water to boil for the noodles, cut all vegetables and herbs and place them in a bowl.
    • Chop the nuts and keep them separate for garnishing.
  2. Cook Noodles:

    • Cook the noodles according to the packet instructions.
    • Drain and run cold water over them to stop cooking. Toss with a dash of sesame oil to prevent sticking.
  3. Marinate the Fish:

    • Season the fish with a pinch of salt and marinate with tamarind paste and water.
  4. Make Dressing:

    • First add the lime and the sugar together so that it can dissolve for a few minutes
    • Then add the fish sauce, sesame oil, finely chopped garlic, and chilli.
  5. Assemble Salad:

    • Add the noodles to the bowl of vegetables and herbs.
    • Pour the dressing over the mixture and toss well to ensure even coating.
  6. Cook Fish:

    • Sear the marinated fish in a medium to hot pan for a few minutes on one side until a nice crust forms.
    • Flip the fish and cook until almost cooked through. Turn off the pan and let it sit for 1 minute to finish cooking.
  7. Serve:

    • Place the salad in a bowl, top it with the perfectly cooked fish, and sprinkle with chopped nuts.
    • Serve immediately and savor the delicious flavors of the East in this Asian-inspired Fish and Noodle Salad.
