Banging Veggie Burrito

Crunchy outside veggie burrito, with tomato salsa, sour cream and homemade pickled red onions

Homemade Burritos, Serves 4

Ingredients:

For the Tortillas:

  • 1.5 cups of flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 2.5 tablespoons of vegetable oil
  • 1/2 to 1 cup of warm water (adjust as needed)

BUT if you cant be bother to make them, just use the shop bought ones and save yourself sometime!

For the Filling (4 servings):

  • 1 avocado (1/4 each burrito)
  • 4 handfuls of spinach
  • Grated cheese
  • Cooked rice
  • Lime zest and juice
  • Salt and pepper
  • Black beans
  • 1-2 large red peppers
  • 10 mushrooms
  • 1 onion
  • 2 cloves of garlic
  • Spice mix: 1 teaspoon smoked paprika, 1/2 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon cinnamon, a sprinkle of chili flakes, salt, and pepper
  • Olive oil
  • Tomato salsa: tomatoes, coriander, hot sauce, olive oil, salt, and pepper
  • Sour cream
  • Homemade pickled red onions

Cooking Steps:

  1. Prepare Tortillas: In a bowl, mix the flour, salt, and baking powder until well combined. Add 2.5 tablespoons of vegetable oil and the first 1/2 cup of warm water. Mix well and assess the consistency. Gradually add more water as needed until the dough comes together. Knead the dough for 5 minutes, then let it rest for 15-20 minutes. Roll out the dough into thin circles, similar in size to store-bought large tortillas. Cook each tortilla in a medium to hot pan for 1-1.5 minutes on each side. Keep warm in a lightly damp tea towel.

  2. Prepare Filling: Slice the avocado and set aside. Warm the cooked rice and mix with lime zest, lime juice, salt, and pepper. For the black beans, cook spice mix and garlic and then add the beans, and cover with water, and cook for 5-8 minutes. Mash them as they cook until thickened.

  3. Cook Vegetables: Slice the red peppers, mushrooms, onion, and garlic finely. Cook them in a very hot pan to sear, aiming for caramelisation. Cook for 1.5 minutes without moving, then flip and cook for another 1.5 minutes. Add the remaining spice mix and a small dash of water to deglaze the pan.

  4. Assemble Burritos: Layer the filling ingredients in the center of each tortilla: avocado slices, refried beans, cheese, lime rice, spinach, and the cooked mushroom mix. Roll up the burritos and sear all edges in a hot pan.

  5. Prepare Tomato Salsa: Make a salsa with diced tomatoes, chopped coriander, hot sauce, olive oil, salt, and pepper.

  6. Serve: Garnish the burritos with tomato salsa, sour cream, and homemade pickled red onions. Enjoy your delicious homemade burritos!
