BBQ Corn on the Cob

BBQ Corn on the Cob with Ziggy Lime and Garlic Butter

Ingredients:

  • Corn on the cob
  • 50g butter
  • 1 clove garlic, grated
  • Zest of half a lime
  • Salt and pepper to taste
  • 25g Parmesan, grated
  • 3 teaspoons sour cream
  • 2 teaspoons coriander, chopped

Cooking Steps:

  1. Prepare the Corn:

    • Begin by removing the outer skin from the corn.
  2. BBQ Cooking:

    • Place the corn on a hot BBQ for 8 minutes, turning occasionally to achieve an evenly cooked and charred corn.
  3. Ziggy Lime and Garlic Butter:

    • While the corn is cooking.
    • In a pan, heat up 50g of butter, add grated garlic, lime zest, salt, and pepper.
    • Heat until the mixture is bubbling.
  4. Prepare the toppings:

    • In a small bowl, squeeze the juice from the zested lime half into 3 teaspoons of sour cream. Mix them together.
    • Grate the parmesan and keep in a seperate bowl.
  5. Coriander Finishing Touch:

    • Chop 2 teaspoons worth of coriander.
  6. Assemble and Serve:

    • Once the corn is cooked, cut it in half, place it on a plate.
    • Pour over the garlic and lime butter, add dollops of the sour cream mixture and finish with a sprinkling of chopped coriander.
