BBQ Nectarines with Mozzarella, Honey, and Thyme
This elegant yet simple salad is a beautiful blend of smoky, sweet, and fresh flavors—perfect as a summer starter or side. Serves 4 as a light dish.
Ingredients:
- 3 nectarines
- 1 sprig of thyme (leaves picked and chopped)
- ½ teaspoon honey
- 1 ball of mozzarella or burrata
- A handful of rocket
- Fresh basil and mint leaves
- Salt and pepper
- Olive oil
- Juice of 1/4 lemon
Method:

Grill the Nectarines:
- Halve the nectarines, remove the stones, and season with a little salt and pepper.
- Place them cut-side down on a BBQ grill and cook for about 10 minutes, or until you see lovely char marks and the juices start to bubble in the center.
- Pro tip: Choose firmer nectarines for grilling, as they’ll soften beautifully over the heat without becoming mushy.

Add Honey and Thyme:
- Once off the grill, drizzle the warm nectarines with honey and sprinkle over the chopped thyme leaves.
- Let them rest for 5-10 minutes to cool slightly and absorb the flavors.

Assemble the Salad:
- Tear the nectarines into bite-sized pieces and layer them on a serving plate with torn mozzarella or burrata.
- Scatter over the rocket, basil, and mint leaves, layering as you go.

Finish and Serve:
- Squeeze fresh lemon juice over the top for brightness.
- Season with a little more salt and pepper, drizzle with olive oil, and serve immediately.
