BBQ Nectarines with Mozzarella, Honey, and Thyme

This elegant yet simple salad is a beautiful blend of smoky, sweet, and fresh flavors—perfect as a summer starter or side. Serves 4 as a light dish.

Ingredients:

  • 3 nectarines
  • 1 sprig of thyme (leaves picked and chopped)
  • ½ teaspoon honey
  • 1 ball of mozzarella or burrata
  • A handful of rocket
  • Fresh basil and mint leaves
  • Salt and pepper
  • Olive oil
  • Juice of 1/4 lemon

Method:

  1. Grill the Nectarines:

    • Halve the nectarines, remove the stones, and season with a little salt and pepper.
    • Place them cut-side down on a BBQ grill and cook for about 10 minutes, or until you see lovely char marks and the juices start to bubble in the center.
    • Pro tip: Choose firmer nectarines for grilling, as they’ll soften beautifully over the heat without becoming mushy.
  2. Add Honey and Thyme:

    • Once off the grill, drizzle the warm nectarines with honey and sprinkle over the chopped thyme leaves.
    • Let them rest for 5-10 minutes to cool slightly and absorb the flavors.
  3. Assemble the Salad:

    • Tear the nectarines into bite-sized pieces and layer them on a serving plate with torn mozzarella or burrata.
    • Scatter over the rocket, basil, and mint leaves, layering as you go.
  4. Finish and Serve:

    • Squeeze fresh lemon juice over the top for brightness.
    • Season with a little more salt and pepper, drizzle with olive oil, and serve immediately.
