Cajun Chicken with a cheese queso sauce and fresh limey slaw

Chargrilled Cajun chicken, with a vibrant limey slaw, chips and a cheesy queso sauce, topped with a little bit of hot sauce

Cajun Chicken with Cheese Sauce, Chips, and Slaw

Serves 1 

Ingredients:

  • For the Chicken Marinade:

    • 1 chicken thigh
    • Cajun seasoning (generously season both sides)
    • A little bit of vegetable oil
    • 1/2 clove of garlic, grated
  • For the Chips:

    • Follow the packet instructions for air frying or oven
  • For the Slaw:

    • 1/4 red or white cabbage, finely sliced
    • 1/4 red onion, finely sliced
    • 1/4 carrot, julienned
    • 1/4 small apple, thinly sliced
    • Zest and juice of 1/2 lime
    • Salt and pepper to taste
    • Fresh coriander (optional)
  • For the Cheese Sauce:

    • 1 cup grated cheese
    • 1 tablespoon cornflour
    • 1 teaspoon Cajun spice
    • Salt and pepper to taste
    • A splash of milk

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the chicken thigh, Cajun seasoning, vegetable oil, and grated garlic.
    • Ensure the chicken is well coated with the marinade.
  2. Cook the Chicken:

    • Preheat your BBQ, oven, or air fryer.
    • Cook the chicken until it's fully cooked and chargrilled to your liking.
  3. Cook the Chips:

    • Follow the packet instructions to cook the chips in the air fryer.
  4. Prepare the Slaw:

    • In a bowl, combine the finely sliced cabbage, red onion, julienned carrot, and thinly sliced apple.
    • Add the zest and juice of 1/2 a lime.
    • Season with salt and pepper.
    • Add fresh coriander if available and mix well.
  5. Make the Cheese Sauce:

    • In a pan, toss the grated cheese with the cornflour.
    • Add 1 teaspoon of Cajun spice and season with salt and pepper.
    • Place the pan on the stove over medium heat and start to melt the cheese, stirring continuously.
    • Add a splash of milk to help dilute the sauce and keep stirring until the sauce is smooth and has a thick pouring consistency. Add more milk if needed.
  6. Assemble the Dish:

    • Once the chips are done and the chicken is cooked, slice the chicken.
    • Pile the chips on a plate and place the sliced chicken on top.
    • Add a generous serving of slaw on the side.
    • Drizzle the cheese sauce over the chicken and chips.
    • Optionally, drizzle some garlic sriracha on top for an extra kick.
