Cheesy Sundried Tomato Swirl Bread

Ingredients:

For the Dough:

  • 450g of bread or plain flour
  • 1.5 teaspoons of salt
  • 1 teaspoon of sugar
  • 300-310 mls of warm water (if you had some milk you could add that to, but the volume is always 300 mls)
  • 7g of yeast
  • 2 tablespoons of olive oil

For the Filling:

  • 180-200g of paste (e.g., sundried tomatoes, cream cheese, confit garlic, ndjua, olives, pesto, the list goes on so what ever you have or like)
  • 100-140g of grated cheese

Cooking Steps:

  1. Prepare Dough: In a bowl, mix together the flour, salt, and sugar. In another bowl, combine the warm water and yeast, and let it sit for 5 minutes until foamy. Add the yeast mixture and olive oil to the flour mixture. If the dough seems too dry, add a little more water, especially if you live in a dry climate. Knead the dough until it becomes elastic and bounces back when pressed. This may take around 10 minutes by hand or 5 minutes using a mixer with a dough hook attachment.

  2. Let Dough Rise: Place the kneaded dough in an oiled bowl, cover it with lightly oiled cling film, and let it double in size. The rising time can vary from 1-3 hours, depending on the warmth of the environment.

  3. Prepare Filling: While the dough is rising, prepare the filling. Mix together the paste ingredients until well combined. Grate the cheese and set aside.

  4. Assemble Bread: Once the dough has doubled in size, roll it out into a rectangle shape. Spread the paste evenly over the dough and sprinkle 2/3 of the grated cheese on top. Roll the dough into a long sausage shape and cut it into 12 pieces. Place the pieces in a baking tray lined with parchment paper and let them rise for another 30 minutes.

  5. Bake: Preheat the oven to 180°C. Sprinkle the remaining cheese over the top of the dough pieces and bake for 30-35 minutes until golden brown and cooked through.
