Classic French Egg Mayonnaise

Homemade Mayonnaise

Ingredients:

  • 3 egg yolks
  • 1 large heaped teaspoon Dijon mustard
  • 3 tablespoons vinegar (I used apple cider, but any type will work)
  • 300ml neutral vegetable oil (or any oil you prefer)

Instructions:

Blend the Base:

  • Add the egg yolks, Dijon mustard, and vinegar to a jug.
  • Use a stick blender to combine them until smooth and creamy.

Add the Oil:

  • Slowly start adding the oil while blending, pouring it in a steady stream.
  • Continue blending until the mixture thickens into a smooth mayo consistency.

Get Creative:

  • Once you have your basic mayo, you can get creative and add any flavors you like!
    • Try curry powder, chipotle chilies, and coriander for a spicy kick.
    • Add pesto for a herb-filled version.
    • Use rice wine vinegar and a dash of soy for an Asian twist.
    • Load it up with cracked black pepper for a peppery bite.
  • The possibilities are endless—let your imagination run wild!
