Creamy chicken and mushroom pasta in 15 minutes

Chicken Fricassee with Spaghetti for One
Serves 1
Ingredients:
- 1 chicken thigh, deboned, skin on
- 0.5 of an onion, diced
- 2 cloves of garlic, crushed
- Tarragon (optional, or any herb like rosemary, basil, or thyme)
- 3 olives, chopped
- 6 capers, chopped
- 2 mushrooms, sliced
- 1 teaspoon whole grain mustard
- Oil from a jar of sundried tomatoes (or any oil)
- 1 tablespoon of cream cheese (or cream, or yogurt)
- Spaghetti for one
Instructions:
- Prep Ingredients: Get a pot of salted water boiling for the pasta. While waiting, chop all your vegetables and prepare the other ingredients. Debone the chicken if not already done.
- Cook Chicken:
- Heat a pan over medium heat with the sundried tomato oil (or any oil).
- Sear the chicken, skin side down, for 3-5 minutes until the skin is crispy.
- Cook Pasta:
- Turn the chicken over to cook the other side and add the pasta to the boiling water. Follow the cooking time on the pasta package (usually about 8 minutes).
- Sauté Vegetables:
- Add the diced onion, crushed garlic, and sliced mushrooms to the pan with the chicken.
- Sauté for about 5 minutes until the vegetables are soft.
- Add Pasta Water:
- Add a ladle full of pasta water to the pan with the chicken and vegetables.
- Stir in the whole grain mustard and place a small lid over the chicken to help it cook through. This will create a bit of steam.
- Check Chicken Doneness:
- If unsure about the chicken’s doneness, use a meat thermometer. The internal temperature should reach 72°C (160°F).
- Finish Sauce:
- When the pasta has only a few minutes left, add the chopped capers, olives, and cream cheese to the pan.
- Let the cream cheese melt, adding another ladle of pasta water if needed to thicken the sauce.
- Combine and Serve:
- Drain the pasta and add it to the pan with the chicken and sauce.
- Mix everything together well.
- Serve immediately.
