Easter Wreath Bread with Mini Eggs

A soft, rich brioche-style sweet bread, perfect as an Easter centerpiece. Decorated with colorful mini eggs and sprinkles, it’s as festive as it is delicious!

Ingredients

For the Dough:
  • 540g flour
  • 75g butter, softened (room temp, can not be cold) 
  • 7g fresh yeast
  • 2 eggs
  • 240ml milk
  • 105g sugar
  • 1 tsp cinnamon
  • 1½ tsp salt
  • 2 tbsp poppy seeds (optional)
  • Zest of ½ lemon
For the Glaze & Decoration:
  • 1 egg yolk + ½ egg white
  • Mini chocolate eggs
  • Sprinkles (hundreds and thousands)

Method

  1. Activate the Yeast

    • Warm the milk until just above blood temperature.
    • Stir in 1 tsp sugar and the yeast, then let sit for 5–10 minutes until foamy.
  2. Mix the Dough

    • In a large bowl (or stand mixer with a dough hook), combine flour, sugar, cinnamon, salt, poppy seeds, and lemon zest.
    • Beat the eggs in a small bowl.
    • Add the yeast mixture and beaten eggs to the flour. Mix on low speed for 4–5 minutes.
    • Gradually add softened butter, one cube at a time, until fully incorporated. The dough should be soft and elastic.
  3. First Rise

    • Lightly grease a bowl with oil.
    • Place the dough in the bowl, cover with cling film, and let rise in a warm place for 1½–2 hours, until doubled/ nearly tripled in size.
  4. Shape the Wreath

    • On a floured surface, divide the dough into three equal pieces.
    • Roll each piece into a long rope and braid them together.
    • Shape into a wreath by joining the ends.
    • Nestle mini eggs into the dough.
    • Cover and let rise for 30–40 minutes.
  5. Bake

    • Preheat oven to 185°C (365°F).
    • Whisk the egg yolk and half of the egg white, then brush over the wreath.
    • Sprinkle with colorful sprinkles.
    • Bake for 30–35 minutes. If browning too quickly, reduce the temperature to 180°C (350°F) for the last 10 minutes.
    • Remove from oven and let cool before slicing.
  6. Serving

    • Enjoy warm with butter or jam.
    • Toast slices the next day for a delicious breakfast treat.
