Easy Beef Birria Tacos
Ingredients:
- 1kg-2kg of tough beef (e.g., short rib, chuck, blade, oxtail)
- 1 onion, diced
- 1 carrot, diced
- Coriander stalks, about 50g
- 1 stick of cinnamon
- 6 cloves
- 700ml beef stock (1 stock cube is fine)
- About 3 chipotle chilies in adobo sauce (or use dried chilies for a smoky flavor)
- 5 tomatoes or 1/2-1 can of tomatoes
- 1.5 tablespoons of cumin
- Tacos or tortillas
- For garnish: lime wedges, coriander leaves, diced onion, grated mozzarella cheese
Cooking Steps:

Prepare Ingredients:
- Chop all the vegetables.
- Rehydrate the dried chili in water, remove it, and deseed it.
- Wrap the cinnamon stick and cloves in muslin cloth.

Cook Beef:
- Season the beef with salt and pepper.
- Sear the beef in a pan until browned on all sides, then remove and set aside.
- In the same pan, sauté the diced onion, carrot, and coriander stalks until softened.
- Add the cumin and cook for 1-2 minutes.
- Add the diced tomatoes and cook until they start to break down.

Combine Ingredients:
- Transfer the cooked vegetables to a pot or oven-safe dish.
- Add the chipotle chilies with adobo sauce, beef stock, and the wrapped cinnamon stick and cloves.
- If using the oven, bake at 180°C for 3 hours. If using the stovetop, simmer for the same duration. Alternatively, use a pressure cooker on high pressure for 1-1.5 hours.

Finish:
- Once cooked, skim off any excess fat from the surface.
- Remove the beef from the cooking liquid and shred it.
- Blend the sauce until smooth, removing any bones and the cinnamon.
- Mix a little sauce into the shredded beef and adjust seasoning as needed.

Assemble Tacos:
- Heat a pan with some of the reserved beef fat.
- Dip each tortilla in the fat and place it in the pan.
- Add grated mozzarella cheese to one half of the tortilla and shredded beef to the other half.
- Fold the tortilla in half and cook until both sides are crisp.

Serve:
- Serve the crispy beef birria tacos with a small bowl of the sauce for dipping.
- Garnish with diced onion, chopped coriander, and a squeeze of lime juice.
