1 Day Focaccia Bread

This easy focaccia recipe yields a soft, airy loaf with a crispy crust, perfect for sharing or enjoying with your favorite dips!

Ingredients

  • 500g plain flour (or 400g plain flour and 100g 00 flour only if you have it)
  • 425g warm water
  • 5g instant yeast
  • 1 tablespoon maple syrup
  • 2 good pinches of salt
  • Plenty of olive oil

Instructions

Step 1: Activate the Yeast

  • In a bowl, combine the warm water (ensure it’s just above body temperature) with the maple syrup and instant yeast.
  • Let it sit for 10 minutes until the yeast dissolves and becomes frothy.

Step 2: Mix the Dough

  • In a separate bowl, mix the flour and salt together.
  • Pour in the water and yeast mixture, ensuring you get all the liquid from the jug.
  • Stir the dough until well combined; no need to knead!
  • Drizzle some olive oil over the top, cover with a tea towel, and let it rest for 15 minutes.

Step 3: Fold the Dough

  • After the initial rest, fold the dough in from the four corners, cover again, and rest for another 25 minutes.
  • Repeat this folding process two more times for a total of three folds.

Step 4: Final Rise

  • At this stage, your dough should have a lovely wobble. Drizzle a little more olive oil over the top, cover with cling film, and let it rise for 1 hour.

Step 5: Prepare for Baking

  • After an hour, tip the dough onto a well-oiled baking tray, drizzling a bit more olive oil on top. Cover it up again and let it rest for another hour.

Step 6: Preheat the Oven

  • When your dough is ready, preheat your oven to 220°C.
  • Remove the cling film, add a splash more olive oil, and make dimples all over the surface with your fingers.
  • Sprinkle with cracked salt or flaky sea salt and herbs of your choice.

Step 7: Bake

  • Place the focaccia in the preheated oven and bake for 15 minutes, or until golden brown and crispy.

Step 8: Serve

  • Once baked, slice off a piece and indulge in the soft, crunchy goodness of your homemade focaccia!
