Gooey, Decadent  Chocolate Brownie, full of raspberries, chucks of white and dark chocolate and peanuts

Gooey, Decadent Chocolate Brownies

Serves 12 (maybe more if you cut the pieces smaller once chilled)

Ingredients:

  • 350g 70% dark chocolate
  • 200g butter
  • 4 whole eggs
  • 2 egg yolks
  • 250g caster sugar
  • 100g white chocolate, chopped
  • 50g flour
  • 60g roasted peanuts (or any nuts you prefer)
  • 80g raspberries

Cooking Steps:

  1. Melt Chocolate and Butter:

    • Preheat your oven to 180°C (350°F).
    • Melt 200g of the dark chocolate with the butter over a pot of boiling water, stirring occasionally until smooth.
  2. Whisk Eggs and Sugar:

    • In a stand mixer, hand mixer or even by hand, whisk the whole eggs, egg yolks, and caster sugar on high speed until the mixture triples in size and holds a ribbon shape.
  3. Combine Mixtures:

    • Once the chocolate and butter have melted, gently fold them into the egg mixture.
  4. Add Remaining Ingredients:

    • Fold in the remaining 150g of dark chocolate, chopped white chocolate, roasted peanuts, and raspberries.
    • Finally, fold in the flour until just combined.
  5. Bake:

    • Pour the batter into a lined baking tray.
    • Bake for 20-25 minutes, or until the center stops wobbling. Avoid using the knife test as the brownies will be gooey.
  6. Cool and Set:

    • Leave the brownies to cool in the tray for a few hours to start setting.
    • For a firmer texture, you can refrigerate them after an hour of cooling.
  7. Portion and Enjoy:

    • Once cooled and set, portion the brownies and enjoy!
