Katsu Curry Sauce

Making katsu curry sauce at home is easier than you think. Here’s how to whip up a smooth, flavorful sauce perfect for serving with crispy chicken or vegetables.

Ingredients

  • 1/2 onion, diced
  • 1/2 carrot, diced small (so it cooks quickly)
  • 1 heaped teaspoon garlic, grated (or chopped to a paste)
  • 1 teaspoon ginger, grated (or finely diced)
  • 1 tablespoon neutral oil
  • A small knob of butter
  • 1/2 tablespoon flour
  • 1 heaped tablespoon curry powder
  • 125ml chicken stock
  • 1 teaspoon honey
  • A dash of soy sauce
  • 1/2 a potato, cooked and cut into small cubes (pre-cooked so it’s ready to add)
  • 1 tablespoon coconut cream

Instructions

Step 1: Soften the Vegetables

  • Heat the oil and butter over low heat in a pan.
  • Add the diced onion, carrot, garlic, and ginger, and sauté for 3-4 minutes until soft, allowing the carrot to cook through.

Step 2: Make the Roux

  • Add the flour and curry powder to the pan, stirring well to coat the vegetables. Cook for about a minute to cook out the raw flour taste.

Step 3: Add the Stock Gradually

  • Slowly pour in the chicken stock, a little at a time, stirring constantly to avoid lumps.
  • Let the sauce simmer for 2-3 minutes, ensuring the flour cooks through—it should no longer taste floury at this stage.

Step 4: Balance the Flavors

  • Remove the pan from the heat and stir in the honey, soy sauce, diced potato, and coconut cream.

Step 5: Serve and Enjoy

  • Give it a taste and adjust seasoning if needed. Serve the sauce over crispy katsu chicken, vegetables, or rice for a cozy, flavorful meal.
