Homemade Tagliatelle with Meatballs

Juicy plump beef and pork meatballs in a rice tomato sauce with handmade tagliatelle. Deep, rich and full of flavour

Handmade Tagliatelle with Meatballs

Serves: 4 as a starter or 2 large mains (you may want to do a little less meat if it was for 2 mains)

Ingredients:

For the Pasta:

  • 180g of 00 flour (If using plain flour, the consistency won't be the same, but it will still work. Keep an extra 20g weighed out in case you need it.)
  • 2 eggs

For the Meatballs:

  • 100g breadcrumbs
  • 1 egg
  • 2 tablespoons chopped herbs (rosemary, thyme, parsley, dried oregano, or a blend of whatever you have)
  • 1 onion
  • 2-3 cloves of garlic
  • 250g beef
  • 250g pork
  • Salt and pepper to taste

Instructions:

  1. Make the Pasta Dough:

    • Mound the flour into a volcano shape and create a well in the middle.
    • Crack the eggs into the well.
    • Use a fork to gently break up the yolks and slowly incorporate the flour from the sides of the volcano.
    • Once a dough forms, knead for at least 10 minutes until the dough is soft and smooth. (If the dough is too sticky, gradually add the extra flour.)
    • Wrap the dough in cling film and let it rest in the fridge for 30 minutes while you make the meatballs.
  2. Roll Out the Dough:

    • After resting, roll out the dough on a floured surface to your desired thickness.
    • Cut into desired widths and lengths for tagliatelle.
    • Dust the surface and rolling pin with the reserved flour to prevent sticking.
    • Form a rectangle, dust with flour, and roll it up to cut into strips.
    • Unravel the strips and dust them again to prevent sticking.
    • Place the cut pasta on a floured plate.
  3. Make the Meatballs:

    • Grate the onion and garlic on the finest side of your grater to create juice.
    • Mix the grated onion, garlic, breadcrumbs, chopped herbs, and egg together.
    • Add the beef and pork, mixing well to combine everything evenly.
    • Season with salt and pepper.
    • It's a good idea to take a little bit and fry it up and tastes it to make sure the seasoning is correct.
    • Roll into balls of your preferred size and place them on a tray.
    • Refrigerate until ready to cook.
  4. Cook the Meatballs:

    • Preheat the air fryer to 200°C (392°F).
    • Cook the meatballs for 10-15 minutes, depending on their size.
    • For the last 5 minutes, turn the air fryer up to 220°C (428°F) to achieve a good color.
  5. Prepare the Tomato Sauce:

    • If you have pre-made tomato sauce, gently heat it in a pan. If not, prepare your tomato sauce from scratch (check my recipe page for the method).
  6. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • When the meatballs are cooked, add them to the tomato sauce and let them simmer gently for 5 minutes to absorb the flavor.
    • Blanch the pasta in the boiling water for a few minutes until al dente.
    • Drain the pasta and add it to the pan with the meatballs and sauce.
  7. Serve:

    • Serve the pasta and meatballs hot, topped with plenty of grated Parmesan cheese.
