Juicy Chicken Satay skewers

Juicy nuggets of chicken thigh with crispy edges, skewered and marinaded. Served with a peanut satay sauce and more roasted peanuts on the top.

Satay Chicken Skewers
Makes 4-6 skewers

Ingredients:

  • 2 chicken thighs
  • A few dashes of soy sauce
  • 1/2 teaspoon of curry powder
  • 1 clove of garlic, grated
  • A thumbnail-sized piece of ginger, grated

Method:

  1. Marinate the Chicken:
    Cut the chicken thighs into cubes. In a bowl, combine the chicken with the curry powder, grated garlic, and ginger. Add a few dashes of soy sauce and mix well. Let the chicken marinate for as long as possible to allow the flavors to develop.

  2. Prepare the Skewers:
    While the chicken is marinating, soak the skewers in water to prevent them from burning during cooking.

  3. Skewer the Chicken:
    Once marinated, thread the chicken cubes onto the soaked skewers. Preheat your air fryer to 200°C and cook the skewers for 12-14 minutes, ensuring the chicken is fully cooked through.

  4. Serve:
    Warm up your satay sauce (recipe on my website: Satay Chicken with Satay Sauce and a Pickled Veg Salad). Plate the chicken skewers and generously pour the sauce over the top. Sprinkle with a few extra peanuts for added crunch.
