Juicy Chicken Satay skewers

Satay Chicken Skewers
Makes 4-6 skewers
Ingredients:
- 2 chicken thighs
- A few dashes of soy sauce
- 1/2 teaspoon of curry powder
- 1 clove of garlic, grated
- A thumbnail-sized piece of ginger, grated
Method:

Marinate the Chicken:
Cut the chicken thighs into cubes. In a bowl, combine the chicken with the curry powder, grated garlic, and ginger. Add a few dashes of soy sauce and mix well. Let the chicken marinate for as long as possible to allow the flavors to develop. -
Prepare the Skewers:
While the chicken is marinating, soak the skewers in water to prevent them from burning during cooking. -
Skewer the Chicken:
Once marinated, thread the chicken cubes onto the soaked skewers. Preheat your air fryer to 200°C and cook the skewers for 12-14 minutes, ensuring the chicken is fully cooked through. -
Serve:
Warm up your satay sauce (recipe on my website: Satay Chicken with Satay Sauce and a Pickled Veg Salad). Plate the chicken skewers and generously pour the sauce over the top. Sprinkle with a few extra peanuts for added crunch.
