Mouthwatering Prawn Toast

Crispy Prawn Toast
Serves 4-6 as a nibble!
Ingredients:
- 6 large uncooked prawns, defrosted
- A handful of coriander stalks
- 1 clove of garlic
- A small piece of ginger
- A dash of soy sauce (this will be your salt)
- 1 teaspoon of sesame seeds
- 4 slices of white bread
Method:

Prepare the Prawn Paste:
In a blender, combine the prawns, coriander stalks, soy sauce, and a dash of soy sauce. Grate in the garlic and ginger, then blend everything until you have a smooth-ish paste. You can also use a stick blender if that's more convenient. -
Assemble the Toast:
Spread the prawn paste evenly onto each slice of bread. For a finishing touch, sprinkle a little extra sesame seed on top of the paste. -
Fry the Toast:
Heat some vegetable oil in a pan over medium heat. Carefully fry the bread, prawn side down. Ensure the heat isn't too high so that the prawn cooks through without burning the bread. If you've spread the paste thinly, it should take around 2 minutes per side. -
Drain and Serve:
Once golden and crispy, transfer the prawn toast onto a plate lined with paper towels to absorb excess oil. Season with a pinch of salt.
