No-Bake Nut & Date Caramel Bars

No-Bake Nut & Date Caramel Bars – Naturally Sweet & Utterly Delicious

A rich, chewy caramel layer, crunchy nuts, and smooth chocolate—all with no baking required!

For the Base:

  • 70g ground almonds
  • 60g desiccated coconut
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • A pinch of salt

For the Caramel Layer:

  • 120g Medjool dates
  • 1.5 tbsp peanut butter
  • 1 tbsp milk (any kind)
  • 1.5 tbsp water
  • A pinch of salt
  • 30g roasted nuts, roughly chopped

For the Coating:

  • 250g dark chocolate (or milk or white, whatever floats your boat)

Method

  1. Make the Base – Add the ground almonds, coconut, maple syrup, coconut oil, and salt to a blender. Blitz until combined, then press into a lined tin.
  2. Make the Caramel – Blend the dates, peanut butter, milk, water, and salt until smooth (leave some texture if you like!). You may also need to add a touch more milk if your dates are very dry.
  3. Assemble – Spread the caramel layer over the base. Add the nuts and press them down the so they stick.
  4. Freeze – Place in the freezer for at least 1.5 hours (4 hours is best).
  5. Coat in Chocolate – Melt the chocolate over a bain-marie (a bowl over simmering water). Cut the frozen mixture into bars, dip each one in chocolate using a fork, and place on a lined tray.
  6. Set – Freeze again for at least 15 minutes (1 hour is ideal).

Then, enjoy these irresistible treats straight from the freezer!
