Steak Frites with Peppercorn sauce, in 15 minutes

Perfectly seared steak with crunchy skinny french fries and a creamy, rich and decadent spicy peppercorn sauce.

Steak Frites with Peppercorn Sauce

Ingredients (Per Person):

  • 1 steak (rump or your preferred cut)
  • Handful of chips (to cook in the air fryer)
  • 1/4 onion, diced
  • 2 cloves of garlic, minced
  • 1/4 teaspoon thyme (fresh or dried)
  • 10 crushed black peppercorns
  • 20/30 Green peppercorns (from a jar and also depending on how spicy you want your sauce)
  • Dash of white wine
  • 70-100ml cream
  • Dash of stock or water (if needed to thin the sauce)
  • Squeeze of lemon
  • Salt and pepper
  • Knob of butter

Cooking Steps:

  1. Prepare Chips:

    • Cook the chips in the air fryer as per the instructions on the bag. They will likely take the longest, so start them first.
  2. Season and Cook Steak:

    • Season your steak on both sides with salt and pepper.
    • Heat a pan over medium heat with a touch of oil. Ensure the pan is hot before adding the steak.
    • Cook the steak for 2.5-3 minutes on each side if it is about 2 cm thick.
    • During the last minute of cooking on the second side, add a garlic clove and a knob of butter. Let the butter foam, then remove the steak and rest it on a rack. Pour the butter over the steak and let it rest for 4 minutes.
  3. Make Peppercorn Sauce:

    • In the same pan, add the chopped onion, garlic, and thyme. Sweat them down for a few minutes, gathering the leftover flavors from the steak.
    • Add a splash of white wine and let it reduce.
    • Add the crushed black and green peppercorns, cooking for another minute until there is only a little liquid left.
    • Pour in the cream and cook to your desired consistency. If the sauce becomes too thick, add a splash of water or stock.
    • Finish with a squeeze of lemon and salt to taste.
  4. Serve:

    • Plate your hot chips and well-rested steak.
    • Pour the peppercorn sauce over the steak.
    • Enjoy your delicious steak frites!
