Sticky Chinese Spare ribs

Sticky Chinese spare ribs in a amazing sweet dark glaze, toasted in sesame seeds and sprinkled on top, some slices of chilli, crunchy shallots and corriander.

Delicious Spare Ribs

Ingredients:

  • Pork spare ribs (a whole rack and then cut it is a good idea)
  • Ginger trimmings or a small piece, chopped
  • 2 cloves of garlic
  • A bit of chili
  • Coriander stalks (keep them in the freezer—they're great for stocks!)
  • 1 teaspoon of Chinese 5-spice
  • A few dashes of soy sauce

Method:

  1. Cook the Ribs:
    Place the ribs in a pan and add the ginger, garlic, chili, coriander stalks, Chinese 5-spice, and soy sauce. Cover the ribs with water and bring to a low simmer. Cook for 1.5 hours or until the ribs are tender and starting to fall off the bone.

  2. Cool and Strain:
    Transfer the ribs to a tray to cool. Strain the stock—you can save it for a delicious bowl of ramen!

  3. Make the Rib Sauce:

    • 1 tablespoon Chinese Shaoxing wine (or substitute with sherry, gin, or white wine)
    • 2 tablespoons soy sauce
    • 2 tablespoons Chinese black vinegar
    • 3 tablespoons slightly diluted hoisin sauce
    • 4 tablespoons water
    • 1 tablespoon oyster sauce
    • 3 tablespoons sugar

    Mix all the sauce ingredients together in a bowl.

  4. Sear and Glaze the Ribs:
    Heat a pan with a bit of sesame oil and sear the ribs to give them a nice color. Pour in the sauce and let it reduce until it coats the ribs nicely. Toss in some sesame seeds for extra flavor.

  5. Serve:
    Plate the ribs with crunchy onions, fresh chili slices, and a sprinkle of coriander, if you have it. These ribs are perfect on their own or served alongside your favorite dishes.
