The Best Cinnamon Buns

Cinnamon Rolls, the softest dough full of loads of cinnamon sugar, toped with melting cream cheese frosting.

Cinnamon Rolls

Ingredients:

  • 180ml (3/4 cup) milk, warmed to 37.8°C (100°F)
  • 155g (3/4 cup) sugar
  • 7g (1 packet) dried active yeast
  • 50g (1/4 cup) melted butter
  • 360g (3 cups) plain flour
  • 1 whole egg
  • 1 egg yolk
  • 55g (1/4 cup) very soft butter for spreading
  • 65g (1/3 cup) dark brown sugar
  • 65g (1/3 cup) light brown sugar
  • 1.5 tablespoons cinnamon

For the Frosting:

  • 120g (1/2 cup) soft cream cheese, room temperature
  • 45g (3 tablespoons) soft butter
  • 95g (3/4 cup) icing sugar

Cooking Steps:

  1. Prepare the Dough:

    • Warm the milk to 35°C (100°F).
    • Add the yeast, sugar, and melted butter to the milk. Let it sit for 5 minutes until foamy and the yeast has dissolved.
    • Add the plain flour, followed by the walk milk mixture, then the whole egg, and egg yolk. Knead in a mixer with a dough hook or by hand until the dough is soft and bounces back.
  2. First Rise:

    • Let the dough rise for about 1.5 hours until it doubles in size. Place it in a warm environment, like an oven with the light on.
  3. Prepare the Filling:

    • Roll out the dough to a rectangle 30cm wide by 25cm tall.
    • Spread the very soft butter evenly over the dough without tearing it.
    • Mix together the dark brown sugar, light brown sugar, and cinnamon. Spread this mixture over the buttered dough.
  4. Shape the Rolls:

    • Roll the dough tightly from the bottom to the top to create a log with lots of swirls.
    • Cut the log into 8 equal pieces and place them in a tray. Cover with cling film and let rise again for 45 minutes to 1.5 hours until doubled in size.
  5. Bake:

    • Preheat your oven to 180°C (350°F).
    • Bake the rolls for 20-25 minutes until golden brown.
  6. Prepare the Frosting:

    • While the rolls are baking, whisk the butter with half the icing sugar until fully combined, about 4-6 minutes.
    • Add the remaining icing sugar and whisk for another few minutes.
    • Add the room temperature cream cheese and beat until the mixture changes from yellow to a pale yellow.
  7. Finish:

    • Let the baked rolls cool for 5 minutes, then spread the frosting on top.
    • Allow the frosting to set for 15 minutes, then enjoy the rolls while warm!
