The Crunchiest Roast Potatoes EVER

Golden Brown, Crispy and Crunchy Roast potatoes with thyme and garlic.

Crispy Roast Potatoes

Ingredients:

  • 4 medium potatoes
  • Salt
  • Pepper
  • Oil
  • Fresh thyme
  • 2-4 cloves of garlic

Cooking Steps:

  1. Preheat Oven:

    • Preheat your oven to 190°C.
  2. Prepare Potatoes:

    • Cut the potatoes into uniform chunks, typically into 4 pieces per potato.
    • Place the potato chunks in cold water with 2-4 cloves of garlic, fresh thyme sprigs, and salt.
    • Bring the pot to a boil, then simmer for 5-8 minutes.
  3. Drain and Shake:

    • Drain the potatoes in a colander and give them a good shake to roughen the surface.
    • Let the potatoes cool for 15 minutes to allow the surface to solidify.
  4. Heat Oil:

    • Place a tray in the preheated oven with some oil and heat for 15 minutes until hot.
  5. Roast Potatoes:

    • Carefully add the potatoes to the hot oil in the tray.
    • Roast the potatoes in the oven for around 40 minutes, turning occasionally to ensure all sides crisp up evenly.
  6. Serve:

    • Once cooked and crispy, serve the roast potatoes immediately. Be cautious as they will be hot inside. Enjoy the crispy, crunchy goodness!
