The most incredible Mushroom soup

Ultimate mushroom soup, such depth of flavour, only 4 ingredients

Homemade Mushroom Soup

Ingredients:

  • 15-20 white mushrooms
  • 4 cloves of garlic
  • 1 large onion
  • 1 tablespoon of thyme leaves, chopped
  • Optional: tarragon leaves
  • 20g of butter
  • Salt and pepper
  • 400ml of water or vegetable stock
  • 50-100ml of cream (adjust to taste)

Cooking Steps:

  1. Prep Ingredients: Thinly slice the mushrooms and finely chop the garlic and onion. Remove the thyme leaves from the stalks and chop them. If using tarragon, strip the leaves of the stalks to.

  2. Cook Vegetables:

    Heat the butter and a splash of vegetable oil in a pan over medium heat. Add the chopped garlic, onion, thyme, and tarragon (if using). Sweat the vegetables slowly for 5-10 minutes until softened. Then add the sliced mushrooms and cook them down slowly over very low heat for 20 minutes. Season with a pinch of salt to draw out the water from the mushrooms. Allow the mushrooms to release their moisture and then caramelize until they are deeply browned and reduced to about 1/4 of their original volume.

  3. Add Liquid: Once the mushrooms are caramelized, add 400ml of water or vegetable stock to the pan. Let it cook for an additional 5 minutes.

  4. Finish Soup: Remove the pan from the heat and stir in 50-100ml of cream, depending on how creamy you'd like the soup to be. Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.

  5. Serve: Ladle the mushroom soup into bowls and serve hot with crusty bread on the side. Enjoy your comforting homemade soup!
