Ultimate Fish Pie – Creamy, Comforting & Packed with Flavor

A rich and luxurious fish pie, filled with tender seafood in a velvety white sauce, topped with buttery mashed potatoes and Parmesan for the ultimate golden crust. A perfect dish for Good Friday—or any cozy night in!

Ingredients

For the White Sauce:

  • 500ml milk

  • ¼ onion

  • 1 clove garlic

  • 2 sprigs fresh thyme

  • 50g butter

  • 50g flour

  • Salt & black pepper, to taste

For the Mash Topping:

  • 4 large potatoes, peeled & chopped

  • 50g butter (Or maybe more! I love mine to be really buttery)

  • Salt & black pepper, to taste

  • A pinch of nutmeg

  • 30g grated Parmesan (for topping)

For the Pie Filling:

  • 1 small onion, finely diced

  • 3 carrots, finely diced

  • 180g hot smoked salmon, flaked

  • 10 prawns, peeled & deveined

  • 1 tsp tarragon

  • 1 tbsp dried dill

  • ½ tbsp Dijon mustard

  • 75g grated cheddar cheese

Method

1. Make the White Sauce

  • Heat the milk in a pan with the onion, garlic, and thyme. Bring to a gentle simmer, then turn off the heat and let it infuse for 5 minutes.

  • In another pan, melt the butter, whisk in the flour, and cook for 1–2 minutes until slightly golden.

  • Strain the infused milk and gradually whisk it into the butter-flour mixture until smooth.

  • Cook until thickened, then season with salt & black pepper.

2. Prepare the Mash Topping

  • Place the potatoes in a pot of cold water and bring to a boil.

  • Cook until fork-tender, then drain and mash with butter, salt, pepper, and nutmeg.

  • Let cool slightly while preparing the filling.

3. Make the Pie Filling

  • In a pan, sauté the onion and carrots until softened.

  • In a large bowl, mix the white sauce, sautéed vegetables, tarragon, dill, mustard, and cheddar cheese.

  • Taste and adjust seasoning with salt & black pepper.

  • Gently fold in the smoked salmon & prawns, being careful not to break them up.

4. Assemble the Pie

  • Preheat the oven to 180°C (350°F).

  • Pour the filling into a baking dish and spread evenly.

  • Spoon over the mashed potatoes, spreading gently. Use a fork to create textured ridges for a crispy top.

  • Sprinkle with Parmesan cheese.

5. Bake

  • Bake for 35 minutes, until bubbling and golden on top.

  • For extra crispiness, increase the heat to 190°C (375°F) for the last 15 minutes.

6. Serve & Enjoy

  • Let the pie rest for a few minutes before serving.

  • Pair with steamed broccoli & minted peas for a complete meal.
