Veggie Spring rolls in the Airfyer

Veggie Spring Rolls
Makes 8 servings
Ingredients:
- 2 cloves of garlic, sliced
- Thumb-sized piece of ginger, sliced
- 1/4 small head of cabbage, finely sliced
- 50g bean sprouts
- 1/2 a carrot, finely sliced
- A dash of sesame oil
- 1/2 clove of garlic, grated (to add once cooked)
- A splash of soy sauce
- Sriracha (adjust to your desired level of heat)
- 1 tablespoon of chopped coriander
- Spring roll pastry sheets
Method:

Prepare the Veggies:
Finely slice the cabbage, carrot, ginger, and garlic. Heat a dash of sesame oil in a pan over medium heat, then add the sliced veggies. Sweat them off until just cooked and softened. Transfer to a bowl. -
Season the Filling:
Once the veggies have cooled slightly, add the grated garlic, a splash of soy sauce, some sriracha, and the chopped coriander. Mix well and taste to ensure the seasoning is to your liking. -
Assemble the Spring Rolls:
Lay a piece of spring roll pastry in a diamond shape in front of you. Place a small pile of the veggie mix near the bottom corner. Fold the bottom corner over the filling, then roll once to secure it. Fold in the sides to create a rectangle shape, then continue rolling to the end. Repeat this process until all the filling is used. -
Cook the Spring Rolls:
Lightly oil the outside of each spring roll with vegetable oil. Place them in an air fryer at 180°C for 15 minutes or until crispy and golden brown. -
Serve:
These spring rolls are perfect as part of a mixed starter platter or enjoyed on their own.
